Meet Dr. Rachel Knowles​

I’m Dr. Rachel Knowles, a Doctor of Clinical Nutrition, licensed dietitian/nutritionist, and herbalist-in-training. My work blends scientific evidence with traditional wisdom to help children and families thrive. I believe wellness should feel accessible, empowering, and personal. Childhood is the stage that sets the foundation for lifelong wellness, and my passion is guiding families in building those foundations with confidence, creativity, and care.​

My private practice, Seedlings Nutrition, was born out of my desire to make nutrition support approachable for real families. Over the years, I’ve worked with parents who felt lost in the maze of conflicting health advice, endless internet searches, and quick-fix solutions that never lasted. Many were juggling mealtime struggles, navigating complex health needs, or wondering if nutrition could truly make a difference for their child.

What I’ve learned is this: nutrition doesn’t have to be overwhelming, and families don’t have to go it alone. Whether it’s addressing food variety challenges, supporting a child with ADHD or autism, working through digestive issues, or identifying food sensitivities, I meet families where they are and help them move forward with practical, evidence-based strategies. My goal is always to turn complicated science into clear, actionable steps that fit into daily routines.

Alongside my nutrition practice, I am completing supervised clinical hours in herbal medicine toward the Registered Herbalist (RH) credential with the American Herbalists Guild. These supervised herbal consultations allow me to offer families safe, plant-based support at a discounted rate while I continue my training. This is an exciting way for parents to access integrative approaches, and it keeps my work rooted in both science and tradition.

In addition to her work at Seedlings Nutrition, Dr. Knowles is a professor in graduate and undergraduate nutrition programs, a CNS supervisor, and founder of the Herbal Wellness Collective, a creative space for books, journals, and lifestyle tools that make herbal wisdom part of everyday life.
